Traditionally, cowboy veggie sausage was made with pea puree. This is a way to preserve food for a long time when hiking and traveling. Today there are many variations on the theme of meatless sausages, but the simplest and fastest recipe is the following.

  1. Prepare 1 cup of clean yellow peas, 4 cloves of garlic, boil small beets.
  2. Prepare a mixture of spices: half a teaspoon of salt, a good pinch of nutmeg and ground black pepper, a little marjoram.
  3. For the remaining products, you will need 3 cups of hot water and a tablespoon of vegetable oil.
  4. The peas are placed in a coffee grinder and turned into flour, poured into a saucepan and filled with hot water.
  5. Bring the mixture to a boil and cook until thickened for 10 to 30 minutes, stirring constantly.
  6. Add spices to the resulting hot puree, add chopped garlic and boiled beet juice, and mix well.
  7. If the mixture is not completely homogeneous, there are lumps, you can use an immersion blender and beat the puree.
  8. Prepare a plastic container (you can cut a regular carbonated drink bottle), grease it with vegetable oil and pour in the puree.
  9. Leave at room temperature first, then place in the refrigerator for 2-3 hours to harden.

The tasty sausage, rich in healthy and easily digestible protein, is ready. It can be stored in the refrigerator for a long time, it can be safely offered to children, it is devoid of any chemicals, because even the dye in it is natural beet juice.

Possible product combinations

Vegetarian sausage, the recipe for which is suggested above, can be prepared from boiled peas, which turn into puree after 2 hours of cooking. To improve the appearance and enrich the taste, bay leaves and chili pepper are added to the puree, fried and ground onions are added to the puree, and chopped herbs are added at the final stage.

Ingredients

So, if you want to make vegan seitan sausage, you will need:

  • Seitan meat. Spices are calculated for the volume of seitan prepared from 2 tbsp. flour
  • clean gauze and thread
  • 1 tbsp. l. fennel seeds
  • 1 tbsp. l. dried oregano
  • 1 tbsp. l. dried paprika
  • 1 tsp. chili powder
  • 1 tsp. salt or to taste

For the broth:

  • 1 large onion
  • 1 carrot
  • 3-4 rings of celery stalk
  • salt pepper

How to make seitan sausage

Prepare seitan. Knead the dough from 2 tbsp. flour and water (as for dumplings).

Rinse the dough under running water until the water is no longer cloudy (the gluten is washed out). The dough should turn out to be a porous, soft ball, as in the picture.

Mix all the spices in a deep bowl: fennel, oregano, paprika, salt and red chili. Knead the porous dough along with the spices. The dough should turn pale red.

Roll the seitan into thick sausages. Place the sausages on cheesecloth, wrap tightly in cloth and tie with thread.

Cut the onion, celery stalk and carrots into arbitrary pieces. Add water, salt and let it boil. Then put the sausages into the broth and boil for 1.5 hours until fully cooked.

After 1.5 hours, the vegan seitan sausages will be ready. They can be lightly squeezed out of excess juice and then fried in vegetable oil until golden brown, or immediately cut into portions and served.

Products needed for cooking:

Curry ketchup:

  • 1 cup tomato sauce,
  • 1 1/2 tablespoons tomato paste,
  • 1 tablespoon curry powder,
  • 2 teaspoons white vinegar,
  • 1 teaspoon onion powder,
  • 1 teaspoon sugar,
  • 1/2 teaspoon liquid amino acids,
  • a pinch of ground ginger.
  • Optional: Add a teaspoon of Sriracha.

Seitana:

  • 1 cup + 1 tablespoon wheat gluten,
  • 1/3 cup chickpea flour,
  • 1 tablespoon yeast,
  • 1/2 tablespoon garlic powder,
  • 3/4 teaspoon dried kumquat,
  • 1/3 teaspoon cumin seeds,
  • 1/3 teaspoon mustard powder,
  • 1 cup vegetable broth,
  • 1/3 cup chopped mushrooms,
  • 1 1/2 tablespoons liquid amino acids,
  • salt and pepper (If you want salty fried sausage, add 1/2 teaspoon salt).

Optional: 4-6 slices of bread.

Instructions:

Ketchup curry:

1. Place all ingredients in a bowl and blend with a blender until smooth and puree-like. Place in the refrigerator.

Sausages:

1. Preheat oven to 180 degrees

2. Sift all dry ingredients into a bowl and mix well.

3. In a blender, combine mushrooms, broth and amino acids.

4. Combine dry ingredient mixture with mushroom broth mixture. Knead the dough.

5. Divide the dough into three or four parts depending on what size you want the fried sausage.

6. Roll the seitan pieces into ropes and place them on large pieces of foil.

7. Wrap the sausages in foil as tightly as possible and twist everything into flagella at the ends.

8. Place the sausages on a baking sheet and bake for half an hour, turning them 90 degrees every 8 minutes. You can check readiness by squeezing the sausages a little; if they are hard, you can remove them from the oven.

9. After you take out the sausages, let them rest a little, about 5 minutes, then unwrap them.

10. When the sausages have cooled, cut them into 2cm wide rings, insert a toothpick into each and serve with curry ketchup.

Note:

Sausages can also be grilled for a crispier crust.

Spicy Italian sausages

Spicy, aromatic with a hint of heat - they are very tasty! Be sure to prepare them and don’t forget to invite your friends!

Spice mixture:

  • 1 teaspoon garlic powder,
  • 1 1/2 teaspoons chopped dill,
  • 1/2 teaspoon black pepper,
  • 1/2 teaspoon salt,
  • 1 teaspoon sweet paprika,
  • 1 teaspoon smoked paprika,
  • 1/4 – 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon oregano,
  • 1/8 teaspoon allspice.

For minced meat:

  • 2 teaspoons + 2 teaspoons olive oil,
  • 3/4 cup chopped mushrooms
  • 1/4 cup finely chopped onion,
  • 1 clove of garlic, minced
  • 2 cups canned beans, drained and rinsed
  • 1 tablespoon sun-dried tomato paste
  • 1/4 cup nutritional yeast,
  • 1/2 cup brown rice flour
  • 1 teaspoon xanthan gum,
  • 1 tablespoon gluten tamari,
  • 1 tablespoon balsamic vinegar,
  • (2 tablespoons gluten-free, vegetarian Worcestershire sauce can be used in place of the vinegar and tamari)
  • a few drops of liquid smoke (optional).

Let's start cooking:

1. Prepare the spice mixture in advance. Set aside.

2. Heat a frying pan with 2 teaspoons olive oil. Fry the onions, mushrooms and garlic until soft. Remove from heat and let cool.

3. Place the beans in a large bowl and use a press, fork, or simply use your hands to puree them. Then add tomato paste, yeast, and brown rice flour. Mix well.

4. Sprinkle with xanthan gum and stir.

5. Add the cooled mixture to the bean mixture and add the spices and stir. Add tamari and balsamic vinegar and mix well again. Add liquid smoke if you are using it.

6. Divide the mixture into 4 parts. Form each piece into a sausage. Wrap each individually in foil and steam for 15-20 minutes. Then refrigerate for several hours, preferably overnight.

Once cooled, unwrap the sausages. Now they can be boiled or fried. For example with onions and peppers!

Vegetarian ham

If you want something juicy and tender, then this ham is for you! It is not only delicious, but also looks very appetizing. Its taste will not leave you or your household indifferent!

Ingredients:

For meat:

  • 1 1/2 cups celery, halved
  • 1 cup chopped onion,
  • 200 grams of tofu,
  • 1/2 glass of water,
  • 1/4 cup soy sauce,
  • 2 teaspoons liquid smoke,
  • 3 tablespoons of tomato paste,
  • 2 cloves of garlic,
  • 2/3 cup yeast,
  • 3/4 teaspoon salt + pinch for vegetables,
  • 2 cups wheat gluten,
  • olive oil.

For the glaze:

  • 2 tablespoons maple syrup,
  • 1/2 teaspoon soy sauce,
  • 1 teaspoon olive oil.

Preparation:

1. Sprinkle the celery and onion with a pinch of salt, place in a dry non-stick frying pan and heat over medium. This is necessary in order to evaporate most of the moisture from the vegetables. Do not add oil or water! If the vegetables begin to fry, reduce the heat slightly; if the onion becomes translucent, increase the heat. In a blender, mix all the remaining ingredients, except gluten, until smooth.

2. Grind the celery and onion in a blender. Do not grind too much; the mixture should be similar to oatmeal.

3. Transfer this mixture to a larger bowl and add the wheat gluten. Mix everything well until smooth.

4. You should have a soft dough. Place it on a large sheet of foil. Wrap tightly, but keep in mind that the dough will expand slightly during baking.

5. Steam the ham for 30 minutes.

6. Place the ham on a baking sheet and unwrap it. Use a sharp knife to score crosswise. Grease with olive oil and bake at 150 degrees for 30 minutes.

7. Beat the glaze ingredients with a fork. Generously coat the ham with the glaze and bake for an additional 15 to 20 minutes until caramelized. You can check the readiness by pressing on the ham; if the pressed area is straightened, the ham is ready.

Vegetarian salami sausage

This sausage is very easy to prepare. So you won’t have any difficulties with preparation, and the result will pleasantly surprise you!

Ingredients:

  • 600 gr. tofu,
  • 5 heaping teaspoons of agar-agar powder,
  • 5 tablespoons umeboshi vinegar,
  • 1 tablespoon miso (dissolve in a little water)
  • 3 heaped tablespoons of gluten,
  • 2 heaped tablespoons of yeast,
  • 2 tablespoons smoked paprika (you can also use regular paprika)
  • chili to taste
  • 1 tablespoon olive oil,
  • vegan broth
  • spices to taste.

Instructions:

1. Drain the tofu and set aside 1/4 of it.

2. Mix all ingredients except gluten. Add wheat gluten and stir vigorously. Try to avoid any lumps.

3. Now take the remaining tofu and roughly crumble it and add it to the mixture.

4. Wrap the mixture in cotton cloth and place the “salami” in the broth, cook for about 1 hour.

5. Carefully, so as not to damage it (the salami will be very soft), remove it from the broth. Set aside and let rest for about an hour.

6. Now you can unwrap and serve.

Homemade baked ham

This ham is no ordinary ham! We used pineapple juice to make it, and the glaze turns out so tender and zesty! You definitely need to try this recipe and treat your family to delicious, aromatic vegan ham one evening!

Ingredients:

  • 3 cups wheat gluten,
  • 1 glass of water,
  • 1/4 cup nutritional yeast,
  • 1/2 cup pineapple juice,
  • 2 tablespoons soy sauce,
  • 2 tablespoons liquid smoke,
  • 2 tablespoons maple syrup,
  • 2 teaspoons black pepper,
  • 2 teaspoons onion powder,
  • 1 teaspoon paprika,
  • 1 teaspoon cloves,
  • vegetarian broth.

For the glaze:

  • 1/2 cup brown sugar
  • 1/4 cup pineapple juice
  • 1/2 stick of vegan butter,
  • 2 tablespoons Dijon mustard,
  • 1 tablespoon vegan molasses.

Let's start cooking:

1. Grease the pan with oil. In a bowl, combine wheat gluten, nutritional yeast, black pepper, onion powder, paprika and cloves. Add pineapple juice, soy sauce, liquid smoke, maple syrup and water. Knead the minced meat for 2 minutes. The mixture should be slightly damp and sticky. Form 2 loaves and place in pan. Pour in the vegetable broth and simmer for about 2 hours, then transfer them to a wire rack and steam for another 3 hours. Then remove the ham and place it in a greased baking dish, preheat the oven to 200 degrees.

2. In a small bowl, whisk together brown sugar, mustard, pineapple juice, melted butter and vegan molasses. Brush the ham with the glaze and place in the oven for 15-20 minutes. Remove from the oven and leave for 15 minutes. That's it, you can cut it into thin slices and treat yourself to homemade ham.

To prepare it you will need the following ingredients:

  • wheat - 2 cups;
  • boiled beets - 1 pc.;
  • onion - 1 head;
  • olive or nut oil - 65 ml;
  • salt - 1 incomplete tbsp. l.;
  • coriander - 1 tsp;
  • garlic - 3 cloves.

Preparation

The wheat is washed several times, poured with boiling water, wrapped and left for 8-10 hours to steam. The remaining water is drained in the morning. The steamed wheat is twisted in a meat grinder twice, using the smallest attachment. Boiled beets are also chopped. It is used to make vegetarian sausage resemble the more familiar meat sausage in color. Onions and garlic are also chopped. Then add the remaining listed components. The amount of spices may vary depending on taste preferences. The finished mixture is rolled into a sausage and wrapped in 2-3 layers of foil. Place in a double boiler and cook for about 40-50 minutes. Then the sausage is transferred to the oven and baked for about half an hour at 180 degrees. Homemade sausage for veggies with peas

For this dish you will need the following products:

  • peas - 200 g;
  • garlic or garlic powder - to taste;

How to cook

Then the resulting mass is spread on and rolled into a sausage. Its diameter can be any. After this, the almost finished vegetarian sausage is transferred to the cold and kept for about a day.
