Ingredients

  • Pearl barley - 1.5 cups.
  • Beef – 400 g.
  • Champignon mushrooms – 200 g.
  • Frozen green peas – 100 g.
  • Onions – 1 pc.
  • Carrots – 1 pc.
  • Vegetable oil (for frying).
  • Black pepper, salt, spices to taste.

Pearl barley porridge with meat, mushrooms and vegetables is prepared as follows:



  • We wash the meat under cold water, dry it with paper towels, and cut into portions. In a deep frying pan or saucepan, heat a couple of tablespoons of vegetable oil. Fry the meat on it until it turns golden brown. Then salt and pepper the mass, add spices and pour in a little boiled water. Simmer it under the lid until cooked, this takes about 40 minutes on average.

  • We wash the champignons, clean them if necessary, and cut them. If the products are small, it is enough to cut them into 4 parts. We cut large specimens into slices. Add them to the meat and simmer for another 10-15 minutes.

  • We clean the carrots and onions. Cut the carrots into strips or chop them on a coarse grater. Chop the onion into cubes. Add vegetables to the meat and mushrooms, simmer the whole mass under a closed lid for another 10 minutes.

  • Barley with meat and vegetables turns out especially tasty if green peas are added to it. The product must first be defrosted and placed on a sieve to drain excess moisture. Add it to the rest of the ingredients and cook for no more than 2 minutes.
  • Barley is prepared separately. To make the porridge soft, it needs to be soaked in plenty of water for 8-10 hours. In the morning, drain the water, rinse the mixture again and fill it with fresh water. Cook the cereal until tender in salted water. When the product becomes soft enough, the water needs to be drained, and the contents of the pan should be wrapped in a warm blanket and left for a little while. Then the grains will open and will be not only soft, but also beautiful.




  • All that remains is to combine the pearl barley with the vegetable mixture and mix thoroughly. Pearl barley porridge with meat and mushrooms will turn out especially tasty if, after combining the preparations, the mass is kept for another 2 minutes on low heat. 4. Cut the carrots into strips, the onion into cubes. Add vegetables to meat and mushrooms, simmer for 10 minutes with the lid closed.

5. When the vegetables become soft, add the peas (after defrosting them) and cook for no more than 2 minutes.

6. Add vegetables and mushrooms to pearl barley. Mix carefully, keep on fire for 1-2 minutes and serve.

Preparation:
On the eve of preparation, in the evening,

and soak in water overnight
(for at least 8 hours. I stood for 12 hours).
Pour plenty of water - the pearl barley will absorb some of it.

Boil beef until done
and grind in a meat grinder
(or chop very finely).
Grate the carrots on a coarse grater.
Cut the onion into small cubes.
Cut the mushrooms into medium pieces.

Fry the onion for a couple of minutes in vegetable oil,
add carrots
fry for a couple more minutes.

Add mushrooms to carrots and onions, fry for 5 minutes,
then add the beef and fry for another 4-5 minutes,
until the liquid evaporates. After this, remove from the heat.

Rinse the cereal soaked the day before again,
place in an oven-safe dish (roasting pan, cauldron,
heatproof pan, deep pan),
pour hot water 2 cm above the level of the porridge,
cover with a lid and leave for 40 minutes. in the oven,
heated to 180 C.

After 40 minutes, remove the barley from the oven,
add mushrooms with meat, salt, spices, mix,
cover with a lid and place back in the oven
for another 40 minutes, reducing the temperature to 150C.

Serve very appropriately with fresh juicy vegetables.

Cooking method
