Yeast-free bread with kefir can be easily and quickly baked at home!

I have already tried baking bread at home, but with yeast and butter, it turned out very tasty, you can see the recipe here. But to be honest, there was too much bread for a kilogram of flour for our family. We are probably little kids.

Now I wanted to bake bread with kefir and without yeast. I didn’t have much kefir, about 300 ml, and from this I formed the recipe.

The recipe turned out to be very simple, from a small amount of very simple ingredients, not time-consuming, because you don’t have to wait for the yeast to rise. It's simple, take it and bake it!

INGREDIENTS FOR YEAST-FREE BREAD
Wheat flour – 300 grams at once + for mixing
Kefir – 300 ml
Salt – 1 teaspoon
Sugar – 1 teaspoon
Cumin – 1 teaspoon
Soda – 0.5 teaspoon
YEAST-FREE BREAD WITH KEFIR
Today there will be a step-by-step recipe.

Sift the flour into a large bowl, add all the dry ingredients except soda, that is, salt, sugar and cumin.

Mix half a teaspoon of soda with kefir in a tablespoon, that is, extinguish the soda so that there is no soda taste in the bread. Put it in the dough.

Add all the kefir and stir well. First with a spoon, then knead with your hands. If there is not enough flour, add a little while kneading until a ball can be formed. But do not overfill with flour, otherwise the bread will be very dense.

We form a round loaf of bread, wrap it in film and let the dough recover a little, about half an hour. While the dough is resting, we preheat the oven to 220 degrees.

After half an hour, beat the bun on a board with flour again, make cross cuts so that it bakes better, and place it on a baking sheet. Sprinkle with flour to make it look nice and crispy.

Place in the oven for about 50 minutes. After 20 minutes, reduce the heat to 200 degrees and leave to finish baking.

When the time is up, we take out our bread and pierce it with a dry toothpick; if the toothpick remains dry, then the bread is ready, you can take it out. My loaf turned out to be quite high, and I was afraid that it might not be baked inside. So I turned off the oven and left the bread there for another 10 minutes. That is, the total time the bread spent in the oven was 1 hour.

As a result, it seemed to me that the crust on the bread was too hard, so I wet a clean towel, put it on the bread and left it there for 20 minutes.

After 20 minutes, I was already enjoying fragrant, fresh kefir bread. How wonderful it is to cut off the crispy skin, spread with butter and enjoy. Bon appetit!

However, due to my inexperience, I made too deep a cut on the loaf, which is why it fell apart like that. Tip: try not to make the cut very deep.

Yes, if you don’t like cumin, you can replace it with thyme, for example, I wanted to bake with cumin.

USEFUL TIPS ON HOW TO BAKE BREAD IN THE OVEN AT HOME
Bread should always be placed in a well-heated oven. It is better to first preheat the oven to 220-230 degrees for the first 15-20 minutes and then reduce to 200 so that the crust does not burn.
It is imperative to make cuts so that there is no uncooked crumb left.
If you have large loaves and you are afraid that the bread may not bake, you can put a container of water in the oven under a baking sheet. So that the water has already boiled by the time you put the bread on.
If the crust of the bread is too stale, place a damp towel on the finished bread for about 20 minutes.

In the modern world, absolutely every housewife can prepare bread with kefir in a slow cooker. Mastering a simple recipe will not be difficult.

Let's prepare the following ingredients:

  • oatmeal (dry flakes) – 1 tbsp;
  • sugar – 2 tbsp;
  • rye flour - 1 tbsp;
  • breadcrumbs - 4 tsp;

This bread is not only very tasty, but also filling. It is made according to a recipe similar to those used by our great-great-grandmothers. You will need the following products:

  • 3 cups wheat flour;
  • 550 ml whey;
  • 2 teaspoons sugar;
  • 2 tablespoons vegetable oil;
  • 2 tablespoons sesame seeds;
  • 2 teaspoons salt;
  • ¼ teaspoon of soda;
  • 9 tablespoons of sourdough.

Please note that flour, whey, butter, as well as the dishes in which you will mix the dough must be warm. To warm up the flour, sift it into a suitable dry container and place in a warm (up to 60 degrees) oven.

  6. Keep an eye on the dough so it doesn't run away. It is light, quick to rise, and can easily “make legs,” as people say. Even if this happened, don't be upset. Using a sharp knife, carefully trim off any excess dough that has escaped from the mold and make a flat cake out of it. You can bake it too.
  7. Moisten the top of the future bread with water and sprinkle with sesame seeds. Or caraway seeds, flax, sunflower seeds, anise - to your taste. Place in an oven preheated to 200 degrees. Place a tray with water on the bottom tier to prevent the bread from burning and saturate it with moisture during the baking process. Cooking time - 50 minutes.

    You can sprinkle sesame or cumin on top of the bread.

  8. If you like a firm crust, remove the bread immediately after it is baked. You can leave the loaf inside until the oven has cooled completely, then the crust will be soft and tender.

This bread can taste different every day. This depends on the brine included in the dough. It can be cucumber, cabbage, tomato, infused with dill, cumin, or vinegar. Some people recommend using a brine that is not very sour, others like it more spicy. It all depends on your taste, you can experiment to choose the most suitable option. So, you will need:

  • 300 g brine;
  • 120 g peeled rye flour;
  • 350 g wheat flour;
  • 1 teaspoon of soda;
  • 10 g salt;
  • 15 g sugar;
  • 2 teaspoons vegetable oil;
  • 2 teaspoons sesame or cumin.

Heat the brine a little, salt it and add rye flour. Stir and leave the mixture to rise for 20-25 minutes.

  1. Add sugar and begin kneading the dough, gradually adding wheat flour. The mass should be soft, slightly sticking to your hands. Cover it and leave it in a warm place.
  2. The dough should double in size. As soon as this happens, place it in the mold with your hands dipped in vegetable oil. Sprinkle with sesame or cumin. Cover with a towel again and place in a warm place for 30 minutes.
  3. Place the pan with the dough in the oven, preheated to 190 degrees. Baking takes about 25 minutes.

    You can check readiness by tapping the crust. If the sound is dull but distinct, it means the bread is ready.

With milk

If you don’t have much time, but there are enough products to surprise your loved ones and friends, we suggest you prepare yeast-free bread with milk with vegetable additives.

Required Products:

  • 400 g flour;
  • 50 g oatmeal;
  • 175 ml milk;
  • 175 ml yogurt;
  • 100 g pumpkin;
  • 3 small onions;
  • 100 g of greens;
  • ½ teaspoon salt;
